ANIMAL WELFARE ANALYSIS (BALI COW) FROM A HALAL STATUS POSTMORTEM AT RPH PALOPO CITY
Abstract
This study aims to analyze the welfare of animals (Balinese cattle) on the halal status of postmortem at the Slaughterhouse (RPH) of Palopo City. The focus of the research includes an overview of slaughtering practices, the influence of technical factors of slaughter on the time of death of Balinese cattle, and the implications of research results on the implementation of regulations and the development of training for Halal Slaughterers (Juleha). The study used a quantitative descriptive approach with multiple linear regression analysis. The study variables consisted of gender, age, number of knife pulls, and body weight at the time of death of cows after slaughter. The results of the study showed that simultaneously the research variables had a significant effect on the time of death of Balinese cattle with an F value of 3.695 and a significance of 0.010 < 0.05. Partially, sex and body weight had a significant effect on the time of death, while age and the number of knives pulled had no significant effect. A coefficient of determination value (R²) of 0.212 indicates that biological and technical factors only explain 21.2% of the variation in time of death. At the same time, the rest is influenced by other factors such as operator skills, animal conditions, restraining techniques, and knife sharpness. The findings of the study show that the quality of handling, the accuracy of cutting techniques, and the competence of halal slaughterers are very important in accelerating the death process and minimizing animal suffering. This study concludes that the implementation of animal welfare standards and halal principles at RPH Palopo City requires increasing SOPs, technical supervision, and Juleha training based on animal welfare and evidence-based slaughtering.
